Almond Flour Blueberry Banana Muffins

10 ingredients- 35 minutes- 2 servings


Ingredients

  • 3 bananas, mashed (about I cup)

  • 2 eggs

  • 1/4 cup olive oil (or avocado oil)

  • 1/4 cup maple syrup

  • I tsp vanilla extract

  • 2 1/2 cups almond flour

  • 1 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • Fresh blueberries (about I cup)


To Prepare

1. Preheat the oven to 350 degrees and grease a muffin

pan (this will make 12 muffins).

2. Mash the banana in a bowl. Add eggs, olive oil, maple

syrup and vanilla extract and mix until combined.

3. Add the dry ingredients. Stir until mixed completely.

4. Gently fold in the blueberries.

5. Divide the batter evenly. Bake for 25 minutes.

6. Let cool for 15 minutes before removing from the

pan.
